Mrs. Ma points out that Chinese food is not only easy to prepare but economical as well. She also stresses that almost all of the ingredients called for in her recipes can be obtained without difficulty and that even the most exotic-sounding items are available at Chinese and Japanese food stores and restaurants in the larger Occidental cities. In cases where suitable substitutions can be made, she helpfully suggests these. She is equally helpful in providing the cook with information on the Chinese cuisine in general, on Chinese-style table setting and entertainment, on typical menus, on the proper preparation or rice and tea, and on the use of spices and flavorings. Best of all, the emphasis through her book ins on timesaving and uncomplicated techniques. Nancy Chih Ma, born and brought up in Manchuria, married to a son of the Manchurian royal family, and now living in Japan with her husband and their four children, has a high reputation as an artist in Chinese cooking. In 1953, at the outset of her carrer as an instructor in the art, she was asked by one of Japan's leading women's magazines to submit a group of Chinese recipes for the benefit of its readers. This led to the publication, in 1957; of her popular Chinese cookbook in Japanese Chugoku no Katei Ryori. Meanwhile, through frequent lecture demonstration ins many parts of Japan and appearances on radio and TV, she had become a familiar figure not only to Japanese housewives but also to Occidental women in Japan, many of whom became her eager pupils. The enthusiastic interest of the latter group in Nancy Ma's delectable art was a major factor in inspiring her to produce the present volume.
